INGREDIENTS
½ RED ONION (DICED)
1 FRESH RED CHILLI (OR ¼ TSP CHILLI POWDER)
6X CHERRY TOMATOES OR 3 REGULAR SIZE (ROUGHLY CHOPPED)
BUNCH OF FRESH CORIANDER (OR DRIED)
3 RIPE AVOCADOS
2 LIMES (OR 4 TBSP LIME JUICE)
S&P
OPTIONAL: ‘GUACAMOLE SMASH’ SEASONING
UTENSILS:
MIXING BOWL, SERVING BOWL, CHOPPING BOARD, TABLESPOON, CUTTING KNIFE, FOLK, ELECTRIC BLENDER (OPTIONAL)
METHOD:
(NB. IF YOU ARE USING A BLENDER, THE CHOPPING OF THE ONION, CHILI & TOMATOES CAN BE ROUGH. IF NOT, CHOP THEM SMALLER. IT’S UP TO YOU IF YOU PREFER A MORE TEXTURED OR SMOOTH DIP.)
ON A CHOPPING BOARD, PEEL AND ROUGHLY CHOP THE ONION. NEXT, CUT THE FRESH CHILLI VERTICALLY, REMOVE AND DISCARD THE SEEDS, THEN ‘CHOP THE CHILLI. THIRDLY, CHOP THE TOMATOES AND MOST OF THE CORIANDER. PLACE THESE FOUR INGREDIENTS IN A BLENDER (IF YOU LIKE SMOOTH!) AND WHIZ FOR A FEW SECONDS.
PEEL AND REMOVE THE STONE FROM THE AVOCADOS. SCOOP THE FLESH INTO THE MIXING BOWL AND BREAK UP THE AVOCADO WITH A FOLK. ADD THE TOMATO MIXTURE TO THE SMASHED AVOCADO.
STIR. ADD THE LIME JUICE, AND SEASON WITH SALT & PEPPER, TO TASTE.
GARNISH: WITH REMAINING CORIANDER LEAVES, SOME CHILLI SEEDS OR POWDER OR TOASTED PINE NUTS!
DELICIOUS DIP WITH ‘CRUDITÉS’ (RAW VEGETABLE STICKS), SUCH AS: CARROTS, CAPSICUM, CUCUMBER, CELERY, OR NACHOS!!
STORAGE: CAN BE KEPT IN THE FRIDGE IN A CLOSED CONTAINER FOR UP TO ONE WEEK, BUT BEST EATEN QUICKLY BEFORE THE GUACAMOLE TURNS BROWN!
