CREAMY, FRESH & FRUITY
INGREDIENTS
1 CUP FROZEN RED FRUITS/BERRIES
2 CUPS NATURAL YOGURT (FULL FAT)
½ TSP VANILLA
½ CUP WHIPPING CREAM
3 TBSP HONEY
2 TBSP CHOPPED FRESH MINT (OPTIONAL)
TOP: A SPRING OF MINT, FRESH FRUITS / NUTS (PISTACHIO OR FLAKED ALMONDS)
UTENSILS:
MIXING BOWL, MEASURING CUP, MEASURING SPOONS, SPATULA, WHISK, CONTAINER WITH LID (SUITABLE FOR THE FREEZER)
METHOD:
IN A BOWL, WHISK ALL THE INGREDIENTS BEFORE ADDING THE ROUGHLY CHOPPED FRUIT/BERRIES.
MIX AGAIN AND POUR INTO THE CONTAINER/TUPPER-WEAR (OR ICE-CREAM MACHINE IF YOU HAVE ONE)
LEAVE TO FREEZE FOR 3-6 HOURS. REMOVE FROM FREEZER 15 MINUTES BEFORE SERVING, AS EASIER TO SCOOP OUT.
TOP WITH FRESH FRUITS &/OR NUTS.
BERRIES MAYBE REPLACED WITH OTHER TROPICAL FRUITS.
NUTRITIONAL HACK:
VITAMIN C LEVELS HAVE BEEN FOUND TO BE HIGHER IN FROZEN CORN, GREEN BEANS & BLUEBERRIES THAN IN THEIR FRESH COUNTERPARTS. THE REASON IS BECAUSE THE FROZEN FOODS ARE ‘SNAP FROZEN’ WHERE THE NUTRIENTS ARE INSTANTLY ‘LOCKED IN’.
IN CONTRAST, FRESH FOOD BECOMES INCREASINGLY LESS FRESH DURING TRANSIT AND SITTING ON SUPERMARKET SHELVES. (STUDY DONE BY THE UNIVERSITY OF CALIFORNIA).
