1 CLOVE OF GARLIC (MINCED)
1 FRESH GREEN CHILLI (OPTIONAL)
BUNCH OF FRESH CORIANDER (OR FRESH BASIL)
6 RIPE TOMATOES
1-2 LIMES (OR 3 TBSP LIME JUICE)
OLIVE OIL
S&P
UTENSILS:
GARLIC PRESS, MIXING BOWL, CHOPPING BOARD, CHOPPING KNIFE, TABLESPOON, SMALL SERVING BOWL.
METHOD:
ON A CHOPPING BOARD, ROUGHLY CHOP THE TOMATOES AND CORIANDER (BOTH LEAVES AND STALKS (CALLED CILANTRO).
PEEL AND DICE (CUT INTO SMALL CUBES) THE ONION, PRESS/MINCE THE GARLIC, AND DESEED AND FINELY DICE THE CHILLI.
ADD ALL THE ABOVE INGREDIENTS TO YOUR MIXING BOWL.
STIR ADD FINALLY ADD THE LIME, OLIVE OIL AND SALT & PEPPER TO TASTE.
GARNISH WITH REMAINING CORIANDER LEAVES.
SERVING: DELICIOUS DIP WITH NACHOS OR MINI TOAST (THE FANCY ITALIAN NAME FOR THIS IS ‘BRUSCHETTA’!
STORAGE: CAN BE KEPT IN THE FRIDGE IN AN AIRTIGHT CONTAINER FOR ONE WEEK.
