UTTERLY VERSATILE & NUTRITIOUS-A BREAKFAST CEREAL OR DESSERT!
INGREDIENTS :
2 CUPS OF OATS (IDEALLY JUMBO)
1 CUP COCONUT FLAKES (IF YOU DON’T HAVE THESE, USE MORE OATS)
2 TSP GROUND CINNAMON
2 CUPS (ROUGHLY CHOPPED NUTS/SEEDS SUCH AS: ALMONDS, CASHEWS, PECAN NUTS, PEPITAS)
1 TBS CHIA SEEDS
–
2 TBSP COCONUT OIL
2 TBSP MAPLE SYRUP OR RICE MALT SYRUP
1 TSP VANILLA ESSENCE/EXTRACT
OPTIONAL:
PINCH OF SEA SALT
2 TSP GROUND CARDAMON
FOR CHOCOLATE FLAVOURED, ADD 1 TBSP OF COCOA POWDER AND 3 TBSP CACAO NIBS/CHOC DROPS (INSTEAD OF THE CINNAMON), AND STIR INTO GRANOLA MIXTURE.
UTENSILS:
MIXING BOWL, SMALLER BOWL, MEASURING CUP, TABLESPOON, TEASPOON, MIXING SPOON, OVEN, BAKING TRAY, BAKING PAPER, GLASS JAR (STORAGE).
METHOD:
MIX THE DRY INGREDIENTS IN YOUR MIXING BOWL.
IN A SMALLER BOWL, MIX THE COCONUT OIL, SYRUP AND VANILLA ESSENCE.
COMBINE ALL THE INGREDIENTS TOGETHER AND POUR ONTO A BAKING TRAY.
ROAST THE GRANOLA MIX IN THE OVEN (CONVECTION SETTING/ 190 DEGREES) FOR 15 MINUTES UNTIL THE OATS START TO TURN GOLDEN.
REMOVE FROM THE OVEN TO COOL.
HOW DO YOU EAT YOURS?
1. MAKE A ‘GRANOLA SUNDAE’ BY LAYERING: GRANOLA, NATURAL YOGURT AND MAPLE SYRUP.
2. ADD A LAYER OF GRANOLA ON TOP OF BAKED FRUIT TO MAKE A CRUMBLE OR,
3. SIMPLY EAT IT WITH YOGURT, ICE-CREAM OR FRUIT.
STORAGE:
GRANOLA CAN BE STORED IN AN AIRTIGHT CONTAINER FOR MONTHS.
