CHRISTMAS ICE-CREAM BOMB

DO YOU PREFER ICE-CREAM TO CHRISTMAS PUDDING??
SERVES: 6 ADULTS / PREPARATION TIME: 15 MINS / CHILLING TIME: 6 HOURS

INGREDIENTS:
MINCEMEAT:
1 CUP RAISINS
2/3 CUP CRANBERRIES (DRIED)
¼ CUP PISTACHIOS
1 ORANGE & 1 LEMON ZEST
1 TSP GROUND CINNAMON
1 TSP GROUND GINGER
PINCH GROUND NUTMEG
1 CUP ORANGE JUICE
¼ CUP LIQUOR (EG COINTREAU)

2 CUPS WHIPPING CREAM
1 CUP SWEET CONDENCED MILK

UTENSILS:
2 MIXING BOWLS, GRATER, TEASPOON, MEASURING CUP, ELECTRIC MIXER, RUBBER SPATULA & CLINGFILM

METHOD:
IN A MIXING BOWL, COMBINE THE MINCEMEAT INGREDIENTS.
STIR, COVER AND SET ASIDE FOR A FEW HOURS OR OVERNIGHT, IN THE FRIDGE.

IN THE OTHER MIXING BOWL, WHIP THE CREAM USING AN ELECTRIC MIXER.
STOP MIXING WHEN YOU CAN TURN THE BOWL UPSIDEDOWN AND THE CREAM STAYS PUT!
ADD THE CONDENCED MILK TO THE CREAM AND STIR WITH A SPATULA. COMBINE THE MINCEMEAT AND THE CREAM MIXTURE.

WASH UP THE MINCEMEAT MIXING BOWL, LINE IT WITH CLINGFILM, THEN POUR IN THE MIXTURE. (THE CLINGFILM MAKES GETTING THE FROZEN BOMB OUT OF THE BOWL EASIER!)
PLACE THE BOWL IN THE FREEZER FOR A MIN. OF 6 HOURS (TO FREEZE).

WHEN FROZEN, REMOVE FROM THE FREEZER AND BOWL. PLACE ON A LARGE PLATE, FLAT SIDE DOWN AND REMOVE THE CLINGFILM.
CUT LIKE A CAKE AND SERVE WITH A DUSTING OF ICING SUGAR (TO LOOK LIKE SNOW!)
