NORWEGIAN CRACKERS (GF / V)

KNEKKEBROD-IN NORWEGIAN! SO QUICK & EASY IT’S CRACKERS (DESPITE THE LONG INGREDIENTS LIST..)

INGREDIENTS:
⅓ CUP SESAME SEEDS
½ CUP FLAXSEEDS
½ CUP PUMPKIN SEEDS/PEPITAS
½ CUP SUNFLOWER SEEDS
2 TBSP CHIA SEEDS
1/3 CUP CORNSTARCH
½ TSP SALT
3 1/2 TBSP CANOLA OIL
¾ CUP BOILING WATER
SPRINKLE OF FLAKEY SEA SALT ON TOP
OPTIONAL: 1 TSP DRIED THYME OR ROSEMARY

UTENSILS:
MEASURING CUP, TABLESPOON, TEASPOON, SPATULA, MIXING BOWL, BAKING TRAY, BAKING PAPER, ROLLING PIN.

METHOD:
PREHEAT OVEN TO 140 DEGRESS CELCIUS.
LINE YOUR BAKING TRAY WITH BAKING PAPER AND SET ASIDE.
IN A MIXING BOWL, COMBINE THE SEEDS, CORNSTARCH AND SALT.
NOW MAKE A WELL IN THE MIDDLE AND POUR IN THE OLIVE OIL AND BOILING WATER.STIR AND LET SIT FOR 10 MINUTES.
SPREAD THE SEED-BATTER OVER THE BAKING PAPER. ADD ANOTHER SHEET OF BAKING PAPER OVER THE TOP AND ROLL THE BATTER WITH A ROLLING PIN UNTIL IT’S ONLY ABOUT ½ CM THICK.
REMOVE TOP LAYER OF BAKING PAPER, SPRINKLE WITH SEA SALT AND ANY OTHER DRIED HERBS YOU FANCY AND GIVE THE BATTER ONE LAST GENTLE ROLL.
IF YOU WOULD LIKE SQUARE CRACKERS, USING A SHARP KNIFE, SCORE THE BATTER, SO THAT THEY WILL BE EASY TO BREAK INTO SQUARES AFTER BAKING.
TRANSFER TO THE OVEN AND BAKE FOR AROUND 90 MINS UNTIL THE JUMBO ‘KNEKKEBROD’ IS TURNING GOLDEN. PLACE ON WIRE RACK TO COOL.
BREAK INTO SQUARES OR IRREGULAR PIECES FOR A MORE RUSTIC LOOK.
