POT BREAD

INGREDIENTS:
400g/ 2.5 CUPS STRONG FLOUR (IDEALLY WHOLEMEAL)
1 SACHET (7g) DRIED YEAST
1 TSP SALT
1 TSP SUGAR
1 CUP WARM WATER
2 TBSP OLIVE OIL
1 CUP SEEDS (eg. SUNFLOWER, PUMPKIN, SESAME, POPPY, FLAXSEED, LINSEED..)

UTENSILS:
MEASURING CUP, TABLESPOON, TEASPOON, MIXING BOWL, HEAT- PROOF/TERRACOTTA POTS, BAKING PAPER, PASTRY BRUSH

METHOD:
TRADITIONALLY, BAKING IN TERRACOTTA POTS REQUIRES GREASING THEM AND BAKING THE POTS IN ADVANCE. FOR SIMPLCITY, I WOULD SUGGEST LINING WHATEVER POT OR TIN YOU DECIDE TO USE WITH BAKING PAPER.
IN A MIXING BOWL, ADD THE FLOUR, SALT, SUGAR AND YEAST.
MAKE A WELL IN THE CENTRE AND POUR IN THE WATER AND OLIVE OIL.
USING YOUR HANDS, KNEAD THE DOUGH ON A CLEAN, DRY, FLOURED SURFACE AND KNEAD (FOR 10 MINUTES,) UNTIL THE DOUGH IS ALMOST STRETCHY.
DIVIDE THE DOUGH INTO FOUR BALLS. MAKE ANOTHER WELL IN EACH AND ADD A SMALL HANDFUL OF SEEDS. KNEAD AGAIN, SO THAT THE SEEDS ARE DISPERSED THROUGHOUT THE MINI LOAVES.
PUT ONE BALL OF DOUGH INTO EACH OF THE LINED POTS, AND PLACE THEM INSIDE A PLASTIC BAG (EG. BREAD BAG) AND LEAVE IN A WARM PLACE TO RISE. (EG. THE OVEN, IF LESS THAN 100 DEGREES CELCIUS)
AFTER ABOUT 20 MINUTES, THE DOUGH SHOULD HAVE DOUBLED IN SIZE.
REMOVE FROM THE OVEN AND DISCARD THE PLASTIC BAGS.
BRUSH MILK ON THE TOP OF EACH LOAF AND ADD A SPRINKLE MORE SEEDS.
RETURN THE POTS TO THE OVEN AND BAKE (AT 190 DEGREES C) FOR ABOUT 20 MINTUES, UNTIL THE TOPS ARE A GOLDEN COLOUR.

APPETIZER SUGGESTION:
TEAR UP YOUR FRESH, HOMEMADE BREAD AND DIP BITE-SIZE PIECES INTO A SMALL BOWL OF: 50ML OF OLIVE OIL, A GLUG OF BALSAMIC VINEGAR, AND A LARGE PINCH OF SEA SALT. DELIZIOSO!

WHITE BREAD IS NOT FAMOUS FOR BEING NUTRITIONAL (SEE THE SUGAR CONTENT & E-NUMBERS ON SHOP BOUGHT BREAD!) THIS SIMPLE, BREAD RECIPE IS FREE OF NASTIES AND THE ADDED SEEDS MAKE THE BREAD PROTEIN AND FIBRE-RICH TOO!
