GREAT WAY TO USE UP SQUISHY BROWN BANANAS!
INGREDIENTS:
2/3 CUP BUTTER (SOFTENED)
¾ CUP BROWN SUGAR
2 EGGS
2 CUPS MASHED BANANA
1 TSP BAKING SODA IN 2 TBSP HOT MILK
2 CUPS SELF RAISING FLOUR
1 TSP GROUND CINNAMON
OPTIONAL: ½ CUP CHOPPED WALNUTS
TOPPING:
½ CUP COCOA POWDER
2 CUPS ICING SUGAR
1/2 CUP CREAM CHEESE
1/3 CUP MELTED BUTTER
GARNISH: 1 TBSP SUNFLOWER KERNELS
UTENSILS:
LARGE MIXING BOWL, MIXING SPOON, MEASURING SPOONS AND CUP, FOLK, BAKING TIN (OR CUPCAKE TRAY + MUFFIN CASES), BAKING PAPER, OVEN.
METHOD:
PREHEAT THE OVEN TO 180 DEGREES, ON FAN SETTING.
IN A LARGE MIXING BOWL, MIX THE BUTTER, SUGAR, THEN EGGS. STIR UNTIL THERE A NO MORE LUMPS.
MASH THE BANANAS WITH A FOLK AND ADD TO THE MIXTURE.
WARM THE MILK AND ADD THE BAKING SODA. STIR AND ADD TO THE MIXING BOWL.
FINALLY, ADD THE FLOUR AND FOLD UNTIL WELL MIXED.
POUR THE MIXTURE INTO A CAKE TIN, LINED WITH BAKING PAPER AND PLACE IN THE OVEN.
BAKE UNTIL THE CAKE IS COOKED THROUGH (I.E, SPRINGS BACK WHEN YOU PRESS THE TOP). THIS WILL TAKE ABOUT 30 MINUTES. ONCE COOKED, TAKE OUT OF THE OVEN AND LET COOL.
GARNISH WITH THE CHOCOLATE TOPPING, WALNUTS OR SUNFLOWER SEEDS.
STORAGE HACK:
WHEN YOUR FRESH BANANAS START TO TIRE, PEEL THEM AND STORE THEM IN A TUPPER-WEAR CONTAINER IN THE FREEZER. PULL THEM OUT TO USE IN SMOOTHIES, ANYTIME!
