HOLY MOLY, IT’S GOOD!
INGREDIENTS
½ RED ONION (DICED)
1 FRESH RED CHILLI (OR ¼ TSP CHILLI POWDER)
3 RIPE AVOCADOS
BUNCH OF FRESH CORIANDER (OR DRIED)
6X CHERRY TOMATOES OR 3 REGULAR SIZE (ROUGHLY CHOPPED)
2 LIMES (OR 4 TBSP LIME JUICE)
OLIVE OIL
S&P
OPTIONAL: GUACAMOLE SMASH SEASONING
UTENSILS:
MIXING BOWL, SERVING BOWL, CHOPPING BOARD, TABLESPOON, CUTTING KNIFE, FOLK.
METHOD:
PEEL AND DICE (CHOP INTO SMALL CUBES) THE ONION, ON A CHOPPING BOARD.
CUT THE FRESH CHILLI VERTICALLY, REMOVE AND DISCARD THE SEEDS, THEN DICE THE REMAINING CHILLI (IF YOU LIKE SPICE!)
PEEL AND REMOVE THE INNER STONE FROM THE AVOCADOS. SCOOP THE FLESH INTO THE MIXING BOWL.
THEN ADD THE ONION, CHILLI, AS WELL AS THE CHOPPED TOMATOES AND MOST OF THE CORIANDER. MIX AND FINALLY ADD THE LIME, OLIVE OIL AND SALT & PEPPER TO TASTE.
GARNISH: WITH REMAINING CORIANDER LEAVES AND A PINCH OF CHILLI SEEDS OR POWDER.
DELICIOUS DIP TO BE EATEN WITH ‘CRUDITÉS’ (RAW VEGETABLE STICKS), SUCH AS: CARROTS, CAPSICUM, CUCUMBER, CELERY, OR NACHOS!!
STORAGE: CAN BE KEPT IN THE FRIDGE IN A CLOSED CONTAINER FOR UP TO ONE WEEK, BUT BEST EATEN QUICKLY BEFORE THE GUACAMOLE TURNS BROWN!
