RAINBOW PIZZA

LOOKING MAGICALLY HEALTHIER!

INGREDIENTS:
PIZZA BASES (HOMEMADE, DOUGH OR COOKED)
TOMATO CONCENTRATE (PURÉE OR PASSATA)
CHEESE (HARD OR PIZZA CHEESE) GRATED
RAINBOW TOPPINGS OF YOUR CHOICE (SEE BELOW FOR IDEAS) – A SMALL HANDFUL OF EACH.
SALT AND PEPPER (TO TASTE)

BY COLOUR: 
RED: TOMATOES, CAPSICUM, (SALAMI/HAM)
GREEN: GREEN OLIVES, HERBS (BASIL, OREGANO), SALAD (ROCKET), SPINACH, SPRING ONION, ZUCCHINI, AVOCADO.
ORANGE/YELLOW: CAPSICUM, CORN, PINEAPPLE.
BLUE/PURPLE: BEETROOT, RED CABBAGE, RED ONION, BLACK OLIVES
WHITE: CHEESE, MUSHROOMS, ARTICHOKE, GARLIC, CAULIFLOWER.

UTENSILS:
OVEN, BAKING TRAY, BAKING PAPER, SHARP KNIFE, SPOON OR SPATULA, CUTTING BOARD, GRATER. 

METHOD:
CHOOSE WHICH COLOURFUL VEGETABLES (& FRUIT) YOU WOULD LIKE ON YOUR PIZZA. 
WASH AND CUT THE TOPPINGS INTO SMALL CUBES, (AND OLIVES OR CHERRY TOMATOES IN HALF). 
PUT OR ROLL OUT THE PIZZA BASES, THEN PLACE ON A BAKING TRAY.
THINLY SPREAD THE TOMATO PASTE OVER THE PIZZA BASE, ALMOST TO THE EDGE. 
SPRINKLE THE GRATED CHEESE EVENLY ON THE TOMATO, THEN ADD YOUR VEGGIE TOPPINGS.
(NOTE: SOME TOPPINGS SUCH AS AVOCADO & ROCKET (SALAD) CAN BE ADDED AFTER COOKING!)
COOK ON CONVECTION SETTING AT 220 DEGREES FOR 15 MINUTES UNTIL THE CHEESE HAS MELTED AND THE EDGES ARE STARTING TO BROWN.
GARNISH WITH GREEN HERBS AND WHY NOT SOME SEEDS TOO?
SERVE WITH SOME HOMEMADE GARLIC BREAD!
