(LOW SUGAR, NO NASTIES!)
INGREDIENTS:
2 CUPS ICE
4 LIMES (JUICE)
8 TBSP BROWN SUGAR
2 TBSP LIME CORDIAL
½ CUP FRESH MINT LEAVES
UTENSILS:
KNIFE, CUTTING BOARD, LEMON SQUEEZE UTENSIL, MEASURING CUP & SPOON, MASON JARS OR GLASSES, ELECTRIC BLENDER, SMALL SAUCEPAN
METHOD:
IN A SAUCEPAN, ADD THE SUGAR TO THE WATER (1 CUP) AND SIMMER FOR ABOUT 15 MINUTES, THE SYRUP HAS THICKENED. SET ASIDE.
WHEN COOL, PRESS THE LIMES TO EXTRACT THE JUICE AND ADD TO THE SYRUP, ALONG WITH THE CORDIAL AND MINT LEAVES.
POUR ALL INTO AN ELECTRIC BLENDER AND BLEND FOR ONE MINUTE, BEFORE ADDING THE ICE.
BLEND FOR ANOTHER 2-5 MINUTES, (DEPENDING ON THE SIZE OF THE ICE-CUBES), UNTIL YOU HAVE A SMOOTH, EMERALD GREEN SLUSHIE.
ADD MORE WATER, LIME JUICE OR SUGAR, ACCORDING TO TASTE.
SERVE IN TALL GLASSES, DECORATED WITH A WEDGE OF LIME AND A SPRIG OF FRESH MINT!
